Simple Spiced Quinces
Serves 6
Wine Match: A dry Vin Santo.
6 medium sized quinces
Lemon (for acidulated water)
The juice and zest (in strips) of one orange
1 cinnamon stick
1 vanilla pod (split and scraped)

500g caster sugar
600ml water
